Food for Thought - Greek Fest!
Dear Friends,
As we leave Greece on our Virtual Tour around the World, my mind
begins to wander. As a bona fide food junkie, it's not unusual for me
to be thinking about my favorite thingÑFOOD! Keeping it healthy and
easy is doable, as this Greek Salad will attest.
I make this salad at least twice a week and just love, love, love it!
Grill some fish, toss together this salad and you've got dinner. I
promise you, you'll be yelling, "Hopa!" at the top of your lungs,
standing on top of the table after one bite. Just don't throw plates
like they do in GreeceÉyou'll end up with a big mess and a shopping
trip to replace them!
Anyway, here's my version of Greek SaladÑenjoy!
Leanne's Greek Salad
Serves 4
3-4 cups red leaf lettuce, torn into bite sized pieces
1/2 cup grape tomatoes, cut in half
1/4 cup seedless cucumber, sliced and cut in quarters
10 pitless Kalamata olives, sliced in half (lengthwise)
1/3 cup Feta cheese crumbles (I buy the herbed one)
1/4 cup minced red onion (optional; sometimes I put it in, sometimes not)
DRESSING:
1 clove garlic, pressed
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
2 shakes dried basil
1 shake oregano
In a large mixing bowl, place all the salad ingredients. In a small
pitcher or juice glass (that's what I use), place the dressing
ingredients. Stir well with a fork.
Pour dressing over the top of the salad and toss well. Serve
immediately with freshly ground pepper over the top.
